I’m so sorry that I didn’t have a post up for you all last week. We had a pretty rough week – Kalen’s grandfather passed away on the 14th, so last week was just a bit hectic because I knew we’d have the funeral.
Unfortunately, when things get hectic, certain things take a backseat. Sorry, dear readers, but the meal plan post is one of those things. I hope you understand.
So, let’s recap what we ate last week, shall we?
June 17: keto lasagna bake w/zoodles
June 18: Asian grilled chicken w/peanut ginger slaw (I thought this was just okay)
June 19: frozen pizza, cheesy breadsticks
June 20: keto pigs in blankets (eh)
June 21: frozen pizza, frozen potato skins
June 22: steak shish kabobs with chimichurri sauce, salad
June 23: Italian chicken legs, salad, zucchini
We definitely deviated from the plan, but on Wednesday we did our grocery shopping, and on Thursday my best friend and her family came over so she could teach me how to cut Kalen’s hair (I think I’ll need another lesson or two). Friday was the funeral and we were just exhausted and not feeling it.
So, what are we having this week?
June 24: barbecue thighs, grilled romaine, cheesy quinoa
June 25: Crockpot Italian cream cheese chicken, pasta, salad
June 26: brats, cauli-rice, zucchini
June 27: buffalo legs (or thighs) in the Crockpot, cheesy quinoa (we doubled the batch on Monday), salad
June 28: no clue since we’re seeing TWENTY ONE PILOTS woo!!!
June 29: cheddar ranch burgers, grilled romaine, homemade potato wedges
June 30: steaks on the grill, homemade potato wedges, Caprese salad for me, salad for Kalen
So there you have it! Hopefully I won’t have to skip a week anytime soon. Writing these out is therapeutic for me, to be honest.
