Happy Monday! Right now, dinner is cooking (you’ll see what you’re having in a few), and my house smells a m a z i n g!!!! It’s a recipe we’ve made before, but I’d somehow forgotten how tantalizing the scent of it was. Let’s just say my stomach is growling and I’m ready for it to be ready!!!
This week is fairly busy for us, so I tried to pick easy recipes to make, but also recipes that are lower in carbs (trying to get that A1C under control). I love my carbs, but my pancreas does not. Boo!
One of my favorite things to do is plan in my Happy Planner, and that includes a meal plan sheet that I use to see at a glance what we’re eating (we have one on a board in the kitchen too). I don’t typically share that but this week, I thought I would change it up and share that snapshot with you!
I’m a giver, what can I say?
June 10: keto creamy poblano chicken over zucchini chunks (we’re too lazy to spiralize)
June 11: garlic Parmesan chicken tenders with asparagus (roasted)
June 12: keto creamy chicken & mushroom casserole with cauliflower rice
June 13: keto pigs in blankets with green beans (tossed with garlic salt and some butter)
June 14: keto lasagna bake with zoodles
June 15: grill something!
June 16: Father’s day cookout with the family
And so there you have it! What we’re eating this week, and what is making me drool as I type this post up!
