Happy Mother’s Day!!! Today, on a day we normally spend with our mothers, Kalen and I are spending the day at home. This morning we went to see Avengers: Endgame (FINALLY) at 9am, and now we’re home and doing many a chore. I vacuumed the house, did some random straightening, and Kalen mowed the yard and is now working on building the first of two elevated raised garden beds. I’m hoping that we can get them finished by next weekend and get some dirt and seeds in there to get our little garden going! I’ve also tasked him with building a shelf that will fit above the top of the oven, where I can rest my oil, salt, pepper, etc. on so that it frees some space on the counter and also gives me quicker access to what I use while cooking, such as the oil that is currently stored on the top cabinet shelf and I can barely reach it haha.
This week I have Monday and Tuesday, so I plan to use those two days wisely in terms of household chores, workouts, dog walks, and studying. I’m also hoping to knock it out of the park with our meals those two days, because I’ll be home and Kalen will be working. This week I also have two things going on that will prevent me from being home for dinner (boo!)
So, onto the meal plan!
May 13: buffalo chicken jalapeno popper casserole, salad
May 14: Greek chicken (I’m going to make a marinade out of some Greek yogurt, lemon juice, garlic, and seasonings), grilled asparagus, cheesy quinoa
May 15: cream cheese & jalapeno stuffed burgers, jalapeno poppers, zucchini
May 16: Asian chicken thighs, zucchini & mushrooms, brown rice
May 17: wedding planning
May 18: dinner with friends
May 19: grilling something – we’ll see what we have on hand come Sunday
